Ingredients For scallops w/ cauliflower puree

1 pkgcauliflower, frozen, thawed

4 csalted water
-
sea salt & pepper, to taste
-
4 Tbspbutter, unsalted

3/4 cwarm milk
-
1 Tbspolive oil, extra virgin

1 1/2 lbsea scallops
-
1 tsplime zest
-
2 tsplime juice
How To Make scallops w/ cauliflower puree

1Combine cauliflower & water in a medium pot. Bring to a boil over medium high heat; cover & simmer until tender, about 25 minutes. Drain & puree cauliflower in food processor with 3 tbsp butter & milk until smooth. Season with salt & pepper & set aside, tent with foil to keep warm.

2Pat scallops dry; season with salt & pepper.

3Melt remaining butter & oil in medium skillet over medium high heat. Cook scallops without moving until the bottoms are golden, 3 minutes. Flip & cook until medium rare, 2 minutes more. Transfer to a plate.

4Remove the pan from the heat, add lime juice & zest to the pan & swirl to bring together with cooking juices.

5Place a dollop of the cauliflower puree in the center of 6 plates, top each with 2 scallops & drizzle cooking juices over the top. Serve warm.
