Ingredients For scallops w/ cauliflower puree

  • 1 pkg
    cauliflower, frozen, thawed
  • 4 c
    salted water
  • sea salt & pepper, to taste
  • 4 Tbsp
    butter, unsalted
  • 3/4 c
    warm milk
  • 1 Tbsp
    olive oil, extra virgin
  • 1 1/2 lb
    sea scallops
  • 1 tsp
    lime zest
  • 2 tsp
    lime juice

How To Make scallops w/ cauliflower puree

    Combine cauliflower & water in a medium pot. Bring to a boil over medium high heat; cover & simmer until tender, about 25 minutes. Drain & puree cauliflower in food processor with 3 tbsp butter & milk until smooth. Season with salt & pepper & set aside, tent with foil to keep warm.

    Pat scallops dry; season with salt & pepper.

    Melt remaining butter & oil in medium skillet over medium high heat. Cook scallops without moving until the bottoms are golden, 3 minutes. Flip & cook until medium rare, 2 minutes more. Transfer to a plate.

    Remove the pan from the heat, add lime juice & zest to the pan & swirl to bring together with cooking juices.

    Place a dollop of the cauliflower puree in the center of 6 plates, top each with 2 scallops & drizzle cooking juices over the top. Serve warm.
