Ingredients
- 3 cloves garlic, minced
- 1 small chile, fresh, chopped (including seeds)
- 1 tablespoon sugar
- 2 tablespoons rice vinegar, seasoned
- 2 tablespoons fish sauce
- 2 tablespoons water
- 1 tablespoon lime juice
- 1 pound sea scallops
- 1 tablespoon olive oil, extra-virgin
How To Make scallops w/ asian lime chile sauce

Step 1Soak skewers in water 30 minutes.

Step 2Pound garlic, chile & sugar to a fine paste with a mortar & pestle or in a small food processor. Stir paste together with vinegar, fish sauce, water & lime juice. (Alternatively, purée sauce ingredients together in a blender.)

Step 3Pat scallops dry. Thread 4 on each skewer (flat sides facing out), then brush both sides with oil (2 tsp total for 4 skewers). Season scallops with salt & pepper.

Step 4Brush a 12" nonstick skillet with remaining teaspoon oil & heat over high heat until hot but not smoking. Sear scallops, turning over once, until just cooked through, about 6 minutes total.

Step 5Serve scallops with sauce spooned over.

Step 6NOTE: Sauce may be made 1 day ahead & chilled, covered. Bring to room temperature before serving.
