Ingredients For scallops w/ asian lime chile sauce

3 clovegarlic, minced

1 smchile, fresh, chopped (including seeds)

1 Tbspsugar

2 Tbsprice vinegar, seasoned

2 Tbspfish sauce
-
2 Tbspwater
-
1 Tbsplime juice

1 lbsea scallops
-
1 Tbspolive oil, extra virgin
How To Make scallops w/ asian lime chile sauce

1Soak skewers in water 30 minutes.

2Pound garlic, chile & sugar to a fine paste with a mortar & pestle or in a small food processor. Stir paste together with vinegar, fish sauce, water & lime juice. (Alternatively, purée sauce ingredients together in a blender.)

3Pat scallops dry. Thread 4 on each skewer (flat sides facing out), then brush both sides with oil (2 tsp total for 4 skewers). Season scallops with salt & pepper.

4Brush a 12" nonstick skillet with remaining teaspoon oil & heat over high heat until hot but not smoking. Sear scallops, turning over once, until just cooked through, about 6 minutes total.

5Serve scallops with sauce spooned over.

6NOTE: Sauce may be made 1 day ahead & chilled, covered. Bring to room temperature before serving.
