Sandy's Salmon Patties

- 1 15 oz
- can salmon, remove bones, don't drain
- 2 small
- green bell peppers, finely chopped
- jalapeno pepper, finely chopped
- 1 medium
- onion, finely chopped
- 1 1/2 c
- corn meal
- 2/3 c
- 2 medium
- eggs, slightly beaten
- seasonings: onion powder, garlic powder, salt and pepper
- 1 Tbsp
- lemon juice
- few shakes of hot sauce
1Chop peppers and onions in food chopper until very finely chopped.
2Put salmon in bowl, mix well with fork.
3Add all other ingredients and mix well.
4Shape by hand into patties.
5Heat about 1 inch of oil in heavy skillet (cast iron if you have it) on low to medium heat. I like to use a mixture of EVOO and Canola oil. Fry in hot oil for about 3 minutes on each side until golden brown. Be careful to not let your oil get too hot.
6Drain patties on paper towels. Enjoy!
