Salmon with Avocado Salsa

This fish can be broiled which is a change from frying..I f you are a BBQ expert it can also be cooked on the Barby.

1/2 c
plain yogurt

green onion fine chopped
1/4 c
pickled ginger or fresh grated ginger 1 tbsp

firm avocado diced

grape tomatoes cut into 4 pieces
1/2
fresh or canned pineapple chopped

salmon fillets about 720g
1 tsp
olive oil
sea salt and pepper to taste

Directions Step-By-Step

Place oven rack in upper 1/3 of oven preheat broiler to 500F..line a large rimmed baking pan with foil. lightly coat the foil with butter.

Stir yogurt with onion, ginger, avocado, tomatoes and pineapple...brush fish with oil and sprinkle with a little saltand fresh ground pepper..place fish skin side down on pan...

Broil fish until a knife tip inserted into deepest part of fish comes out warm 10 to 12 minutes...remove from pan and place on platter with several slices of lemon added to pan around the fish...serve with the salsa
