- 1 can 14.75 oz pink salmon
- 2 large eggs
- 1 sleeve saltine crackers
- 2 tablespoons mayo (optional) i like mccormick w/ lime
1In a bowl combine Salmon, eggs, crackers and optional mayo. I do not drain Salmon. Blend together with a fork and hands. Form into 3 to five patties depending on how large you like yours.
2Fry in a small amount of oil for 6 or 7 minutes each side or until brown or crisp on each side.
