Quick fishermans clam chowder

Ingredients

1 tsp
olive oil
1
onion, chopped
1
celery stalk, chopped
2
6-1/2 cans chopped clams, undrained
1
8 oz bottle clam juice
1-3/4 c
chicken brotth
1 large
potato, diced
1 tsp
dried thyme
1/4 tsp
each salt and white pepper
3 Tbsp
cornstarch
2 c
light cream

Step-By-Step

1In lg pot over medium heat, saute onion and celery in oil for 5 mins. Add clams w/ their juices, broth, thyme, salt and pepper.

2Cover, bring to a boil. Reduce heat, cover, cook until potatoes are tender, about 15 mins.

3In bowl whisk together cornstarch and cream. Add mix to chowder, cook until thickened, stirring often.
