Parmesan Baked Fish

Healthier and tastier way to serve fish. I have also used flounder, catfish, grouper, perch and tilapia with great results.If your fish is not getting crispy try broiling it for a minute or so to get it crispy. Oh and parmesan from a can is ok but treat yourself and use freshly grated. You will be oh so happy you did.

Ingredients

1 lb
sole fillets
2 Tbsp
dry bread crumbs
1 Tbsp
grated parmesan cheese
1/2 tsp
dried basil
1/2 tsp
paprika
1 dash(es)
black pepper
1 Tbsp
yogurt
2 Tbsp
snipped parsley

Step-By-Step

1Cut fish into 4 serving pieces.

Combine bread crumbs, parmesan cheese, basil, paprika, and pepper. Mix well.
2Brush one side of each piece with yogurt; dip into crumb mixture; place in oil-sprayed baking pan coated side up.
3Bake uncovered on rack slightly above middle of oven at 500 F for 10 minutes, or until fish flakes easily with fork.
4Sprinkle with parsley (optional)
