Low-fat tuna casserole.

I love tuna casserole, but not all the fat and cheese, so I made this.

Ingredients

2 c
no yolk noodles, dried
2 c
sliced fresh mushrooms.
1 c
frozen broccoli stir-fry veggies
3/4 c
chopped onion
1
10-3/4 oz reduced-fat can, condensed cream of mushroom soup
3/4 c
fat-free milk.
1/2 tsp
dried dill
1/4 tsp
salt and pepper each
1
6 oz can water-packed tuna. drained, flaked
2 Tbsp
grated parmesan cheese.

Directions Step-By-Step

Heat oven to 375. Spray a 2-quart casserole dish w/ cooking spray, set aside. In lg saucepan, cook noodles, mushrooms, stir-fry veggies and onion in boiling water for 5 mins. Drain, return to pot. In bowl, stir together soup, milk, dill, salt & pepper. Stir into noodle mix. Fold in tuna. Spoon mix into casserole dish. Cover, bake 25 min. Uncover, sprinkle w/ parmesan cheese. Cook 5 min, uncovered.
