Italian Tuna Patties

My family loves these tuna patties. I serve them with a nice green salad and Italian green beans.

Ingredients

2 (5 oz.) can(s)
light tuna in water, drained well
1 medium
zucchini, shredded
1
egg, lightly beaten
1/2 c
italian bread crumbs
2 Tbsp
shredded mozzarella cheese
2 Tbsp
grated parmesan cheese
2 Tbsp
mayonnaise
1/2 tsp
oregano
1/2 tsp
basil
1/4 tsp
onion powder
1/2 tsp
garlic powder
to taste
salt & pepper
2-3 Tbsp
olive oil

Step-By-Step

1Shred the zucchini. Place it in a colander. Press lightly with a spoon to remove the liquid.

2Place all ingredients except oil into a mixing bowl. Stir to blend very well.

3Form the mixture into patties. Set aside.

4Heat olive oil in a large skillet over medium.

5Cook patties until golden brown (about 2-3 minutes per side) Drain on paper towel lined plate.

6*** Be sure not to crown the skillet. Cook in batches if needed.

7Serve immediately
