Ingredients
- OLD BAY DIPPING SAUCE:
- 1 - 6 oz packages liberté méditerranée french vanilla yogurt
- 1/2 cup mayonnaise, fat-free
- 3 tablespoons Dijon mustard
- 2 tablespoons Old Bay seasoning
- salt & pepper, to taste
- REMAINING INGREDIENTS:
- 3/4 cup all-purpose flour
- 2 x large eggs
- 2 cups Panko bread crumbs
- 2 tablespoons vegetable oil
- 2 pounds 1" thick haddock filets, skinless, sliced crosswise into 1" wide sticks

Step 1Adjust oven rack to middle position & preheat oven to 450 degrees F. Set wire rack in rimmed baking sheet & spray with cooking spray. In a bowl, whisk yogurt, 1/4 C mayo, 1 tbsp mustard & 1 tbsp old bay seasoning until combined. Season with salt & pepper; set aside & refrigerate until needed.

Step 2In a shallow baking dish or pie plate, combine, 1/2 C flour, remaining old bay seasoning, 1/4 tsp salt & 1/8 tsp pepper; mix to combine. In another shallow baking dish or pie place, whisk remaining mayo, remaining flour, eggs & remaining mustard. Combine panko & oil in skillet & toast over medium high heat until lightly browned, 5 minutes. Transfer toasted panko to a 3rd shallow baking dish or pie plate.

Step 3Pat haddock dry with paper towels & season with salt & pepper. Working with 1 stick at a time, coat fish sticks lightly with flour mixture; dip in egg mixture & dredge in panko, pressing to adhere. Transfer to prepared wire rack & bake until crumbs are golden & fish is cooked through, 10 - 12 minutes. Serve with old bay dip.
