MANGO BBQ SAUCE:
tomato sauce, reduced sodium
ketchup, reduced sugar
dark brown sugar, lightly packed
apple cider vinegar
1In a medium bowl, combine tomato sauce, mango nectar, ketchup, brown sugar, vinegar, molasses, & garlic powder. Whisk thoroughly & then stir in diced tomatoes & mango.
2Place fish & sauce in a container & toss to coat. Cover & let it marinate in the refrigerator for 30 minutes.
3Bring a skillet sprayed with nonstick spray to medium heat on the stove. Add fish & marinade. Once marinade begins to simmer, cover & cook until the fish is tender & cooked through, about 5 minutes.
