grilled shrimp skewers with sugar snap peas

Most recently I was able to purchase at a market some really fresh sugar snap peas and was thinking about what I wanted to make with these delicious peas and came up with this. I thought shrimp would go really well with the snap peas and it worked. It was funny as I was preparing this dish my youngest nephew was over and tasted these peas (which he told me he hated peas) and to his surprise he loved them! I explained just how different they were from canned peas. Well, he couldn't stop eating them and my 3 cups of sugar snap peas ended up almost completly disappearing. He was drizzling honey over them and eating them raw. It was too cute and I was so excited he was eating them I really did't say too much. Well, I hope I was able to make the "Sugar Snap Peas" stand out and hold their own to the shrimp. They were so sweet and crunchy I loved even having them on the skewer too. Hope you enjoy. Kim

Ingredients For grilled shrimp skewers with sugar snap peas

  • MARINADE FOR SHRIMP
  • 2 Tbsp
    olive oil, extra virgin
  • 2 tsp
    sesame oil
  • 1 tsp
    garlic powder
  • 3 to 3 1/2 Tbsp
    red hot sweet chili sauce
  • 1 1/2 tsp
    worcestershire sauce
  • 3 Tbsp
    fire roasted jalapeno's w/chipotle peppers
  • 1 Tbsp
    honey
  • 1 md
    lime, juiced or 3-4 true lime packets
  • SHRIMP SKEWERS
  • 50-60 md
    or large fresh shrimp, peeled and deveined
  • 8-10 md
    skewers
  • toasted black sesame seeds
  • turmeric, ground
  • salt
  • FOR SUGAR SNAP PEAS ON THE PLATE
  • 2 to 3 c
    sugar snap peas
  • 1 -1 1/2 Tbsp
    olive oil, extra virgin
  • salt and pepper to taste
  • toasted black sesame seeds
  • JUST BEFORE SERVING
  • 1 md
    lime, for squeezing over shrimp right before servings

How To Make grilled shrimp skewers with sugar snap peas

    Gather your marinade ingredients

    Prepare your marinade and place in a bowl or in a ziplock baggie. Clean your shrimp and add to marinade. Refrigerate for 1 to 2 hours.

    Clean your fresh sugar snap peas. You can steam your peas for 5 minutes or so and just place your shrimp skewers on top of the peas or you can add them to the skewer as well. They cook nicely with the shrimp and still have a nice crunch to them even after grilling. If cooking add your oil, salt, pepper and toasted black sesame seeds after you steam them.

    Take your shrimp out of marinade and place on skewers alternating the sugar snap peas or just the shrimp themselves. Now, add your sprinkle of tumeric, salt & pepper to taste and toasted black sesame seeds. After placing them on the skewer grill accordingly to the size of shrimp you use. I had a medium shrimp so it was 3 to 4 minutes on each side.

    Once shrimp is done remove from grill and plate over the peas and then squeeze fresh lime juice over them right before serving.
