Ingredients

loin of mahi mahi
8
big limes
3/4 c
brown sugar (more if you like sweeter)
1
onion (vidalia is great for this )
1/2 Tbsp
ginger
3-5 clove
minced garlic
1 tsp
red pepper flakes

Directions Step-By-Step

juice limes and add sugar onion ginger garlic and red peppers

cut fish into serving size pieces and place fish in mix and soak at least 3 hours overnight even better

place soaked fish on hot grill skin side down first ( if grill is clean and you brush with oil right before putting fish on it will reduce sticking) slide the fish up and down the grill grate for first 10 seconds or so to sear and reduce sticking cook for 5 minutes and flip cook additional 5 minutes or until done. baste with juice a few times during grilling
