Ingredients

(5- to 6-oz.) boneless skinless fish fillets, such as tilapia
1/4 tsp
salt
1/4 tsp
pepper

(4x1/2-inch) strips orange peel, cut into thin slivers
1 Tbsp
slivered fresh basil

plum tomatoes, chopped (about 1 1/2 cups)
1/4 c
finely chopped red onion
1 Tbsp
orange juice
1 Tbsp
olive oil

Directions Step-By-Step

Heat grill. Cut 4 pieces of heavy-duty foil into 14-inch squares. Place 1 fish fillet in center of each square. Sprinkle with salt and pepper; top with orange peel and basil.

Combine all remaining ingredients in small bowl; spoon over fish.

Fold foil over fish, making a tight double fold in center and on each end to close securely. Grill, covered, over medium heat or coals 8 to 12 minutes or until fish just begins to flake. Let stand 5 minutes.
