Ingredients For fried salmon patties

  • (2) 15-oz. can
    pink salmon
  • 2 sleeves
    saltine crackers, crumbled
  • 4
    raw eggs
  • salt and pepper, to taste

How To Make fried salmon patties

Drain canned salmon. Remove bones and "skin," if desired. In a large bowl, use your hands to mix together: salmon, saltine cracker crumbs, eggs, salt & pepper. Form into patties (approx. 3" diameter). Cover bottom of 10" skillet w/shallow layer of cooking oil -enough to come up around the sides of patties, when placed in oil. Fry patties in hot oil, about 5 minutes on each side, until crispy, golden brown. Remove and place on paper towels to drain. 2 cans will make 18-19 patties, allowing about 3 patties each, for 6 people.

Note: You may want to cook these outside, using an extension cord and an electric skillet; or, if you have a side burner on your gas grill, you could fry them over that, to keep your home from having the scent of salmon lingering for the next couple of days. ha! But, even if you have to put up w/the lingering scent for a little while, these patties taste so good, it's worth it! :)
