CURRIED PRAWNS (SALLYE)
An easy dish to make and serve.
- 2 lb
- 1/2 c
- olive oil
- 2 Tbsp
- homemade curry powder (link below)
- 1 medium
- onion, finely minced
- 1 c
- grated coconut
- 1/2 c
- coconut milk, unsweetened
- red bell pepper, minced
- green bell pepper, minced
Devein and deseed peppers and cut into chunks
Place in food processor and pulse until finely minced
(or you can buy already peeled and deveined)
When oil begins to shimmer, add onions/pepper mixture and curry powder.
Saute until onions are translucent (about 3 minutes)
Stir frequently to avoid burning
Add coconut and coconut milk and cover skillet.
Turn heat down to low and simmer until sauce begins to thicken (about 5 minutes)
Stir to prevent burning
