Love experimenting with salmon patties. I have never made them the same twice.

Pan Fry

Ingredients

14 oz
can salmon, drain and remove bones
salt
& pepper to taste
1
lightly beaten egg
2 1/2 - 3 Tbsp
finely minced onion
2 Tbsp
yellow corn meal
1 1/2 Tbsp
buttermilk
4 1/2 Tbsp
flour
1 Tbsp
mayonnaise
1/2 tsp
dried dill
oil
for frying

OPTIONAL SAUCE

1/3 c
plain yogurt or sour cream
1/3 c
finely diced cucumber - squeezed of excess water
1/8 tsp
dried dill
1 clove
crushed, minced garlic
pinch
or 2 of salt

Directions Step-By-Step

In a bowl, mix salmon, egg, buttermilk, seasoning, flour, mayonnaise, cornmeal and onion. Mix well.

In a cast iron skillet, heat about 1/4 cup oil. Drop salmon mixture by tablespoonfuls into hot oil and flatten some with back of spoon. Fry for about a 1 1/2 minutes per side or until desired crispiness.
Drain on paper towels. Season with additional salt now, if preferred.

If making sauce, combine everything, mixing well and keep refrigerated until ready to use. Can double recipe if you want more sauce.
