Ingredients For crunchy baked tilapia

  • 1/4 c
    all purpose flour
  • 1/4 tsp
    salt
  • pepper, to taste
  • 2 x lg
    egg whites
  • 1/4 c
    bread crumbs, dry or panko
  • 1/4 c
    cornmeal
  • 1/2 tsp
    basil, dried
  • 1 lb
    tilapia fillets

How To Make crunchy baked tilapia

    Preheat oven to 450 degrees F. Sift flour, salt & pepper together in shallow dish & set aside. In a bowl, beat egg whites until white & frothy.

    In another bowl, combine bread crumbs, cornmeal & basil. To bread the fillets, dip first into flour, shaking off any excess, then dip into the egg whites, then into bread crumb mixture.

    Spray shallow baking dish with non stick cooking spray. Lay filets flat in dish, tucking in any thinner edges for more even cooking. Bake for 10 - 15 minutes or until fish flakes easily with a fork.
