1/4 call purpose flour

1/4 tspsalt

pepper, to taste

2 x lgegg whites
-
1/4 cbread crumbs, dry or panko

1/4 ccornmeal
-
1/2 tspbasil, dried

1 lbtilapia fillets
How To Make crunchy baked tilapia

1Preheat oven to 450 degrees F. Sift flour, salt & pepper together in shallow dish & set aside. In a bowl, beat egg whites until white & frothy.

2In another bowl, combine bread crumbs, cornmeal & basil. To bread the fillets, dip first into flour, shaking off any excess, then dip into the egg whites, then into bread crumb mixture.

3Spray shallow baking dish with non stick cooking spray. Lay filets flat in dish, tucking in any thinner edges for more even cooking. Bake for 10 - 15 minutes or until fish flakes easily with a fork.
