Crab-Stuffed Fish Fillets

Ingredients

grouper,snapper,or catfish fillets
1/2 c
green onions minced
3 Tbsp
butter, cold
1/2 lb
crabmeat, fresh
1/2 c
bread crumbs, seasoned
1/4 c
parsley,fresh,chopped
1/4 c
heavy cream
3/4 c
dry white wine
1/3 c
butter, melted
1 tsp
cajun seasoning
salt & pepper

Directions Step-By-Step

melt 3 tbs butter in a large skillet and saute onion for 5 min over med heat,. remove from heat mix in crab meat,bread crumbs,parsley,cream,and cajon seasoning. season fish lightly with salt & pepper. Spread stuffing mixture over fillets and roll; secure with wooden bamboo skewer.

line 12" dutch oven with quick-release foil. put fish in bottom of dutch oven

Combine wine,and melted butter . pour pver fish,. Bake over med heat for 30 min,or just unil fish turns opaque,basting with sauce.
