Ingredients For crab quesadillas

  • 8 oz
    flake style immitation crab
  • 1 c
    reduced fat monterey jack cheese
  • 1 tsp
    olive oil, extra virgin
  • 1/2 md
    onion, diced
  • 1 tsp
    red pepper flakes
  • 2
    plum tomatoes, seeded & diced
  • cilantro, fresh, to taste
  • 2 Tbsp
    lime juice
  • 16 - 12
    flour tortillas, fat free
  • salt, to taste
  • pepper, to taste
  • cayenne pepper, to taste
  • cumin, to taste
  • sour cream, lite, for dipping

How To Make crab quesadillas

    Shred crab flakes into fine pieces & combine with cheese. Saute the onion, in olive oil until tender, set aside to cool. Combine the onion with the red pepper flakes, tomatoes, cilantro & lime juice. Toss together & season with spices.

    To make quesadilla, place a tortilla flat in a large (12") non-stick saute pan. Top with an even layer of crab & cheese mixture & with a thin topping of the tomato mixture. Top with a second tortilla & cook over low heat until cheese begins to melt & bottom tortilla is lightly browned. Carefully flip tortilla over in the pan & brown other side. When tortilla is brown & cheese melted, remove from pan onto a cutting board & cut quesadilla into wedges. Repeat process. Serve hot.
