Ingredients For crab quesadillas

8 ozflake style immitation crab
-
1 creduced fat monterey jack cheese
-
1 tspolive oil, extra virgin
-
1/2 mdonion, diced
-
1 tspred pepper flakes
-
2plum tomatoes, seeded & diced
-
cilantro, fresh, to taste
-
2 Tbsplime juice
-
16 - 12flour tortillas, fat free
-
salt, to taste
-
pepper, to taste
-
cayenne pepper, to taste
-
cumin, to taste
-
sour cream, lite, for dipping
How To Make crab quesadillas

1Shred crab flakes into fine pieces & combine with cheese. Saute the onion, in olive oil until tender, set aside to cool. Combine the onion with the red pepper flakes, tomatoes, cilantro & lime juice. Toss together & season with spices.

2To make quesadilla, place a tortilla flat in a large (12") non-stick saute pan. Top with an even layer of crab & cheese mixture & with a thin topping of the tomato mixture. Top with a second tortilla & cook over low heat until cheese begins to melt & bottom tortilla is lightly browned. Carefully flip tortilla over in the pan & brown other side. When tortilla is brown & cheese melted, remove from pan onto a cutting board & cut quesadilla into wedges. Repeat process. Serve hot.
