Crab Cakes With Spicy Mayonnaise

Ingredients

1 lb
lump crabmeat
1/2 c
celery, finely chopped
1/2 c
green onions, chopped
3 c
panko bread crumbs (divided with 2 cups reserved for coating)
2 medium
eggs
1/3 c
light mayonnaise
1/2 tsp
dijon mustard
2 Tbsp
seafood seasonings (such as old bay)
1
dash hot pepper sauce
1 Tbsp
lemon juice
3 Tbsp
finely chopped parsley
4 Tbsp
butter

SAUCE:

1 c
light mayonnaise
2 tsp
sun-dried tomato paste
1
minced garlic clove
salt & pepper
dash of hot pepper sauce

Directions Step-By-Step

Combine all the ingredients together in large mixing bowl (reserving 2 cups panko crumbs for coating).

Form mixture into 3 inch patties.

In small dish or bowl, place reserved panko crumbs and press each patty into the crumbs to coat outsides of patties.

Fry in butter (about 2 tbsp.) in large skillet on low until the patties are golden brown and crispy, about 5 to 8 minutes on each side. Place on dish and keep warm.

SAUCE:

Combine all the sauce ingredients in small mixing bowl. Serve over warm crab cakes.
