Coconut Shrimp with Pinacolada Dipping Sauce
***Make sauce first about 2 hours in advance! Sauce needs to chill to blend flavors
- 2 c
- bisquick mix
- 1 c
- 3 Tbsp
- 1 c
- coconut flakes
- 1/2 can(s)
- pinacolada concintrate
- 1/3 c
- sour cream
- bag of uncooked large or jumbo shrimp
In Medium Bowl combine 1 cup Bisquick mix with beer. Set aside.In another bowl add just 1 cup Bisquick mix and coconut. In fryer heat up oil. Dip shrimp shells removed into beer mixture then into Bisquick powder. Let sit a minute then fry 2-3 minutes. Drain on paper towel.
Mix together 1/2 can pina colada concentrate and sour cream. Add pineapple. mix well Chill 1 hour. Serve cold. Sauce is for dipping!
