Coconut Rice and Beans

This is a traditional side dish from the North Coast from Honduras.

Ingredients

2 c
rice, long grain
2 c
cooked red, black or pinto beans
1 Tbsp
chopped garlic
1/4 c
chopped onion
1/4 c
chopped bell pepper
1/4 c
chopped cilantro
2 Tbsp
vegetable oil
1 can(s)
coconut milk, (13.5 oz., 400ml)
2 c
water
1 tsp
salt

Step-By-Step

1In a medium pot, heat the oil, add the garlic, onion, bell pepper, fried a little, then add the rice, fried well.

2Then season with salt,add the coconut milk, water,beans and cilantro. Cover and let it boil till all the liquid is consumed.

3Serve as a side for any Seafood.
