Ingredients

FISH SOAK:
4 fish filets, your choice
milk, enough to cover fish
2 Tbsp lemon juice
all purpose flour
BATTER:
1/2 c bisquick
1/2 c self rising flour
1 tsp seasoning salt
1 Tbsp sugar
1 x lg egg
2 Tbsp corn oil
6 oz club soda
1/2 tsp lemon zest, grated
1/4 tsp onion powder
1/4 tsp salt

Kimmi's Notes:

Kind of simular to Long John Silver's batter.

 

Directions

FISH SOAK:
Place fish in bowl & add enough milk to cover the fish & keep it submerged. Add lemon juice to help tenderize the fish. Cover & refrigerate 3 - 4 hours. Drain well & dip fish in flour to coat lightly.

In a large bowl, add flour, seasoned salt & sugar; mix well & set aside.

In another bowl, beat egg & corn oil; mix well & then add club soda. Add to flour mixture & add lemon zest, onion powder & salt.

Let fish dry a few minutes. Heat oil in deep fryer to 425 degrees F. Dip fish in prepared batter & catch drips in batter bowl. Fry 4 minutes or until brown & puffed up. Keep warm in oven on 275 degrees F. until all fish is done.
