My favorite type of meat has always been fish and this recipe is one of the best I've ever eaten. The sauce is not only pretty but delicious and adds just the finishing touch to an already fantastic recipe. I have used the sauce on salmon fillets but it will go well with any type of fish. Don't be concerned about anyone who doesn't like yogurt because you cannot taste it. The yogurt helps to save on fat and calories. It takes very little time to have this ready to eat and on the table. Just add some pasta, potatoes or rice, it goes well with anything.

Ingredients For baked salmon with cucumber dill sauce

  • 1 can
    salmon
  • 1 md
    onion, chopped
  • 1 sm
    sweet green pepper, seeded and chopped
  • 1/2 c
    celery, chopped
  • 1/2 c
    plain bread crumbs, dry
  • 1/4 c
    plain yogurt
  • 1/4 c
    mayonnaise
  • 1
    egg, slightly beaten
  • 1/4 tsp
    pepper
  • 1/2 c
    mayonnaise
  • 1/4 c
    sour cream
  • 1/4 c
    plain yogurt
  • 3/4 c
    finely chopped seeded cucumber
  • 1/4 c
    finely chopped onion
  • 1 Tbsp
    fresh dill or 1 teaspoon dry dill

How To Make baked salmon with cucumber dill sauce

    Preheat the oven to 325*. Generously grease four 6-oz custard ups.

    Combine salmon, onion, green pepper, celery, bread crumbs, yogurt, mayonnaise, egg and pepper together in a bowl. Stir to blend well.

    Divide mixture evenly amongst prepared custard cups; pack well. Place a small cookie sheet in oven and arrange the custard cups on it.

    Bake in the preheated oven for 30 minutes or until the mixture begins to pull away from sides of cups. To unmold, run a small knife around edge of each cup. Invert onto serving dish or individual serving plates. Spoon Cucumber Dill Sauce over tops. Serves 4.

    CUCUMBER DILL SAUCE Stir together the mayonnaise, sour cream, yogurt, cucumber, onion and dill in a small saucepan and heat over low heat just until warmed through.
