Baked Salmon in Foil w/Veggies

Ingredients

2 lb
salmon, skinless filet
1 large
zuchinni, sliced
1 large
squash, sliced
1 medium
shallot, sliced
1 Tbsp
olive oil
1 Tbsp
oregano, dried
salt/pepper to taste

Step-By-Step

1cut 4 pieces of foil... slice the zuchinni, squash & shallot into 1/4 inch slices.
2cut salmon into 4 pieces & salt & pepper, on each piece of foil, place the sliced veggies equally divided, place a salmon piece on each. sprinkle with oregano and olive oil.
3tightly fold each packet, bake at 350 for 30 mins.
serve with a side of yellow rice ( or your favorite)
