Ingredients

1 lb frozen fish fillets (cod, ocean perch, halibut or flounder)
2 Tbsp fine cracker crumbs
1 can(s) (14 oz.) stewed tomatoes
2 Tbsp chopped onion
1/4 tsp salt
1/8 tsp black pepper
1 Tbsp butter
1/4 to 1/2 c cheddar cheese, shredded

Ellen's Notes:

While not much of a seafood lover, I have been known to eat fish if you disguise the fishy taste enough. This recipe, found in an old cookbook, seems to pass the test.

Directions

Thaw fillets as directed on package.

Grease a 1-qt. shallow baking dish and sprinkle with the cracker crumbs. Lay the fillets on top of crumbs.

In a medium bowl, combine tomatoes, onion, salt and pepper. Pour over fillets. Dot with butter and cheese.

Bake in a preheated 350-degree oven for 35 minutes, until the fish "flakes" when pierced with a fork.
