Ingredients For baked cod casserole

  • 2 Tbsp
    olive oil, extra virgin, divided
  • 2 lg
    onions, thinly sliced
  • 1 c
    white wine, dry
  • 4
    cod fillets
  • 2 tsp
    thyme, dried
  • 1/2 tsp
    salt & pepper
  • 2 slice
    whole wheat bread, finely chopped
  • 1/2 tsp
    paprika
  • 1/2 tsp
    garlic powder
  • 1 c
    gruyere cheese, shredded

How To Make baked cod casserole

    Preheat oven to 400 degrees F.

    Heat 1 Tbsp oil in a large ovenproof skillet over medium high heat. Add onions & cook, stirring often, until just starting to soften, 5 - 7 minutes. Add wine, increase heat to high & cook, stirring often, until the wine is slightly reduced, 2 - 4 minutes.

    Place cod on the onions & sprinkle with thyme, salt & pepper. Cover the pan tightly with foil; transfer to the oven & bake for 12 minutes.

    Toss the bread with the remaining 1 Tbsp oil, paprika & garlic powder in a small bowl. Spread the bread mixture over the fish & top with cheese. Bake, uncovered, until the fish is opaque in the center, about 10 minutes more.
