Ingredients For zumba fiber charged chili

1 tspcanola oil

3 ozground chicken breast

1 clovegarlic, minced
-
1/2 cred bell pepper, diced

1/4 conion, diced
-
1/2chipotle pepper in adobo seasoning, chopped (optional)

1/2 ccanned crushed tomatoes
-
1/2 cblack beans
-
1/4 cchickpeas (aka garbonzo beans)

1 cchicken stock
-
1/8 tsppaprika
-
1/8 tspcumin
-
1/4 tspchili powder
-
1/4 tsporegano, dried
-
pepper, to taste
-
1 ozcheddar cheese, low fat, shredded

1 Tbspgreen onions (both greens & whites), chopped
How To Make zumba fiber charged chili
-
1Heat oil in a saute pan over medium high heat. Add chicken & brown for 2 minutes. Add garlic, peppers, onions & chipotle pepper & cook for an additional 3 minutes. Add tomatoes & cook for 1 - 2 minutes. Add beans, chickpeas, chicken stock, paprika, cumin, chili powder & oregano. Stir to combine & bring to a simmer. Lower heat to medium low & simmer for 45 minutes. Season with pepper. Serve in a bowl topped with cheese & green onions.
