This chicken casserole is so smooth and creamy and I get so many compliments on it and am always requested to bring it to potlucks or make it here at home. The taste is wonderful and can go with any vegetable or salad you want to add with it. Warm rolls or cornbread adds to the mix. Enjoy
1Cover chicken breasts with water that has been salted and bring to boil and allow to cook for approximately one hour. Remove from water and allow to cool, then shred or cut into bite size pieces.
2Meanwhile, preheat oven to 350. In a 2 quart casserole dish, mix soups and sour cream until well blended. Then mix in chicken pieces and mix well again.
3Crush the sleeve of saltine crackers and add to the melted butter and mix well. Then place on top of the chicken mixture and arrange so it covers entire top of mixture. Bake in preheated oven approximately 30 to 45 minutes or until bubbly and the top is golden brown. enjoy
