Wild Thang... Ashton with a big eggplant
Depends on size and amounts
1Chop up eggplant (one or more).
2Place pieces on baking sheet. Put in freezer. When frozen solid, remove from freezer, loosen from pan by gently tapping pan on edge of counter.
3Pour frozen pieces of eggplant into zipper bags. Place them in the freezer until ready to use!
4Add some of the eggplant pieces to: Pasta Sauces, Chili, Soups, Stews, make Dips, .... it is even great in egg dishes!
