Ingredients For weight watchers turkey meatloaf

1 pkgcauliflower, frozen, thawed

1 canchicken broth, low salt
-
1 1/2 tspcanola oil
-
1 mdvidalia onion, chopped
-
5 clovegarlic, minced
-
1 1/2 lbground turkey
-
1 1/4 tspsalt
-
1/4 tsppepper
-
1/4 cparsley flakes
-
1/2 cold fashioned oats
-
2 Tbspparmesan cheese, fat-free
- TOPPING:

1/3 cketchup, low sugar

2 Tbspdijon mustard
How To Make weight watchers turkey meatloaf

1Preheat oven to 375 degrees F. Cover a sheet tray with foil.

2Add the cauliflower to a small saucepan & cover with the chicken broth. Cover the pot with a lid. Simmer until tender. Add cauliflower to a blender along with the broth. Blend until smooth, scraping sides of blender as necessary. Let cool. The cauliflower will thicken as it cools down.

3Heat oil in a large non stick saute pan. Once shimmering, saute onion & garlic until just softened. Remove to a large bowl to cool. Once cool, add pureed cauliflower, turkey, salt, pepper, parsley, oats & parmesan cheese. Mix all meatloaf ingredients well. Shape into a loaf on the prepared sheet tray. In a small bowl, mix together the ketchup & mustard & brush on top of the loaf.

4Bake for 45 minutes, until cooked through. Rest for 5 minutes before slicing.
