Ingredients For spicy "un-fried" chicken

  • 1 1/2 lb
    chicken pieces
  • 1/4 tsp
    garlic powder
  • 1/4 tsp
    salt
  • 1/8 tsp
    black pepper
  • 1/4 tsp
    cayenne pepper
  • 1/4 c
    mayonnaise, light
  • 1 lg
    egg, slightly beaten
  • 1/2 tsp
    tabasco (or more to taste - i used about 1 tsp)
  • 1 1/4 c
    corn flakes cereal, crushed or shake n bake

How To Make spicy "un-fried" chicken

    Preheat the oven to 375 degrees F. Spray a large shallow baking pan with nonstick spray.

    In a small bowl, mix garlic powder, salt, pepper & cayenne; mix well.

    Sprinkle the chicken with the garlic/pepper mixture & rub it into the chicken, let sit for 5 minutes.

    In a large bowl, combine the mayonnaise, egg & hot sauce. Add the chicken; toss to coat.

    Place the cereal crumbs (or shake n bake) on a sheet of wax paper. Dip the chicken into the crumbs pressing so the crumbs adhere.

    Place the chicken in the pan and lightly spray with nonstick spray.

    Bake until the chicken is golden brown & cooked through, 40 – 45 minutes. Do not turn.
