Ingredients For spicy "un-fried" chicken

1 1/2 lbchicken pieces

1/4 tspgarlic powder
-
1/4 tspsalt
-
1/8 tspblack pepper
-
1/4 tspcayenne pepper

1/4 cmayonnaise, light
-
1 lgegg, slightly beaten
-
1/2 tsptabasco (or more to taste - i used about 1 tsp)

1 1/4 ccorn flakes cereal, crushed or shake n bake
How To Make spicy "un-fried" chicken

1Preheat the oven to 375 degrees F. Spray a large shallow baking pan with nonstick spray.

2In a small bowl, mix garlic powder, salt, pepper & cayenne; mix well.

3Sprinkle the chicken with the garlic/pepper mixture & rub it into the chicken, let sit for 5 minutes.

4In a large bowl, combine the mayonnaise, egg & hot sauce. Add the chicken; toss to coat.

5Place the cereal crumbs (or shake n bake) on a sheet of wax paper. Dip the chicken into the crumbs pressing so the crumbs adhere.

6Place the chicken in the pan and lightly spray with nonstick spray.

7Bake until the chicken is golden brown & cooked through, 40 – 45 minutes. Do not turn.
