Always a favorite of my family and friends whenever we have leftover turkey or chicken. Healthy and satisfying. No matter what time of year I always have to buy a whole chicken or turkey to cook and use the meat to make a few casseroles for the freezer. My family of 3 boys love this dish and would eat it every week if they could. As I am not a lover of dark meat I don't mind if it is used in this casserole dish
1In a casserole dish layer brocolli,layer cut up turkey or chicken, spread cream of chicken soup over top of chicken or turkey, spread mayo ,squeeze lemon juice,sprinkle curry powder, spread can mushrooms drained, top with grated cheddar cheese, then add crushed croutons over top
2do not mix up the ingredients. Layer each step as in a lasagna. I usually add a bit more soup, curry and grated cheese but you can make as large as you like.
3Cover with casserole lid or foil and bake at 350 degrees for 1 hr. 30 min. If you want to make a few casseroles cook first in oven before freezing as it will become runny if not baked first
