Three Cheese Chicken Bake

1/2 c
chopped onion
1/2 c
chopped green pepper
3 Tbsp
butter, room temperature
1 can(s)
cream of chicken soup (regular or fat free, your choice)
8 oz
can sliced drained mushrooms
2 oz
jar pimientos
1/2 tsp
basil, dried
8 oz
pkg, noodles(any kind) cooked & drained
3 c
diced cooked chicken
2 c
ricotta or cottage cheese (your choice & low fat/non fat if preferred)
2 c
shredded cheddar (low/non fat, your choice)
1/2 c
parmesan cheese
1/4 c
buttered bread crumbs

Directions Step-By-Step

Oven preheated to 350 degrees. Grease a 13x9 pan.
In a skillet, saute onion & green pepper in the butter. Remove; stir in soup, drained mushrooms, pimientos & basil; set aside.
In a large bowl, combine noodles, chicken, ricotta or cottage cheese, shredded cheddar & parmesan cheese; mix well.
Then add the sauce mixture to the noodle mixture and mix well.
Transfer to the greased 13x9 pan and bake uncovered for 40-45 minutes or until bubbly.
Remove and sprinkle with bread crumbs; Bake 15 minutes longer.
*For the buttered bread crumbs, I honestly believe I used just the Italian Bread Crumbs and it was good that way!
