Ingredients

boneless skinless chicken thighs
olive oil
1 Tbsp
butter
2 c
chicken stock
2 Tbsp
tomato paste
4
shallots chopped
3 clove
garlic minced
1/2 c
dry white wine
1/3 c
heavy cream
2 Tbsp
fresh tarragon minced

Directions Step-By-Step

Season the chicken with salt and pepper. Place oil in a heavy skillet. Add the chicken brown on both sides about 4 minutes. Remove chicken and set aside.

Add the butter, shallots and garlic. Saute until shallots are golden. Add the white wine and cook until most has evaporated. Add the chicken stock, and tomato paste. Place the chicken back into pan and simmer until chicken is done. Remove chicken and stir in cream. Add the tarragon. Bring to a boil taste and adjust seasoning and serve over chicken
