Taco Chicken in the Crockpot
boneless, skinless chicken breasts
med-lrg jar salsa (about 24oz)
1Place chicken in crockpot.
2Combine the salsa and taco seasoning (if you have kids that don't like the "chunks" - just blend the two ingredients in the blender)
3Pour over chicken and cook on low for about 5.5 hours and then shred the chicken and cook for about an hour more.
4Add shredded cheese before serving, if desired.
5Serve over rice, or chips or in soft tacos or enchiladas. Freezes well too.
