Ingredients For taco beer can chicken

1 pkgtaco seasoning mix
-
1 Tbspcilantro, fresh
-
2 Tbspolive oil, extra virgin

1chicken, roasting (6 - 7 lbs)

1 lgonion, cut into 8 wedges
-
1 canbeer, not lite
-
cherry or grape tomatoes (optional)
-
chile peppers (optional)
-
parsley flakes (optional)
How To Make taco beer can chicken

1Place oven rack in lowest position of oven; remove all remaining racks. Preheat oven to 350 degrees F. Combine seasoning packet, cilantro & oil; reserve mixture.

2With fingers, carefully seperate skin from chicken breast starting at neck. Spread 1/2 of reserved seasoning mixture over breast meat under skin. Tuck 1/2 of onion wedges under skin in areas near thighs & wings. Rub remaining seasoning mixture over chicken skin. Place remaining onion wedges in chicken cavity.

3Discard (or drink - LOL!) 1/4 C beer from can (or pour into Emeril Cast Iron Vertical Roaster cavity); place can in center of roasting pan. Holding chicken by neck cavity, place over beer can until can is inside cavity & chicken is standing upright, making sure not to spill beer. Roast until meat thermometer inserted into thickest part of thigh away from bone registers 180 F, about 1 hour, 25 minutes; tent with foil if browning too quickly. Let stand 10 minutes.

4Using tongs, remove can from chicken. Skim fat from pan juices. Serve juices with chicken. If desired, garnish with tomatoes, peppers & parsley.
