sweet & sour chicken salad sandwich

This is my own creation, a can of white meat chicken seemed small & alone, so decided on sweet & sour...this is what I came up with today for lunch! It was quick, easy, and tasted great...husband ate it & said it was really good... I used red leaf lettuce, but could use romaine or any other you like.. Please try this, it's just different enough to be good!

Ingredients For sweet & sour chicken salad sandwich

  • 1/2 stick
    butter or margarine
  • 1/4 c
    brown sugar
  • 1/4 c
    finely diced red pepper
  • 1/4 c
    finely diced yellow pepper
  • 1 c
    pineapple tidbits/crushed pineapple, drained
  • 3 Tbsp
    finely diced onion
  • 1/2 tsp
    minced garlic (i use from a jar)
  • 1 tsp
    mrs. dash kitchen blend seasoning
  • 1 can
    white meat chicken (10 0z.), drained & shredded
  • romaine or red leaf lettuce
  • 4 slice
    12-grain bread

How To Make sweet & sour chicken salad sandwich

    Melt butter in nonstick skillet over medium heat. Add sugar, peppers, pineapple, onion and garlic. Sprinkle seasoning over and stir to combine. Let this mixture cook over medium¬high heat, stirring occasionally, until sauce starts to thicken and everything is tender.

    Add chicken to skillet and stir well to combine, cook until completely heated through.

    Put leaf lettuce on two slices of the bread, divide skillet mixture evenly between the two pieces of bread. Top with more lettuce and other two slices of bread.

    Note: You can put mayonnaise or mustard on the bread but mixture is tasty without it and is very moist.
