Super Easy Tomato Soup

I love tomato soup anytime of the year, but especially in the fall, when the cool weather creeps in. This recipe can be ready in less than 30 minutes on the stovetop, or it can slow cook in a crock pot all day. Either way, its delicious with cheese crackers or a grilled cheese sandwich.

butter, softened
1 Tbsp
garlic, minced
1 Tbsp
onions, chopped
3 can(s)
stewed tomatoes, italian-style
1 box
chicken broth
1 tsp
hot sauce, (i use texas pete), optional
1/2 c
cork screw pasta, optional

Directions Step-By-Step

In large stock pot, saute garlic and onion in butter over medium heat.
Add chicken broth and canned tomatoes and hot sauce. Using immersion blender, blend tomatoes until the soup is as thick or thin as you like it. (My family likes their's a little chunky.)
Simmer on low for 30 minutes or pour into crockpot and cook on low for 4-6 hours.
If your family likes pasta, add 1/2 cup cork screw pasta to the soup during the last 10 minutes on the stovetop, or the last hour in a crock pot. Enjoy!
