Sunshine Tacos with Summer Salsa

I made up this recipe one day when I had some leftover baked chicken. It's just right for a Summer day or any day when you don't really want to cook. Your family will love it.

tortillas, flour
sour cream
2 c
baked chicken cut up
1 small
package shredded lettuce
1 small
package shredded cheese any kind you like

Directions Step-By-Step

Prepare chicken and set aside. Warm tortillas in non-stick pan and spray with vegetable oil. Place tortillas on a plate. Put on tortilla, chicken,lettuce, sour cream, cheese, and salsa. Fold over and make sure you put small amounts so that ingredients don't fall out.
Summer Salsa: 1 can chunky pineapple, 1 can tropical fruit, salt to taste, lemon juice to taste,1/8 tsp. parsley flakes. Finely chop all fruit, add salt and lemon juice to taste, sprinkle in parsley flakes. Serve on other ingredients in Sunshine Tacos. Also great as a salad topping.
