Stir Fry of Broccoli & Chicken

1 lb
boneless skinless chicken breast
6 c
broccoli florets
2 large
red or green peppers, quartered lengthwise cut into 1/8" strips
1 large
onion, halved lengthwise, cut into 1/4" slices
2 large
garlic cloves, minced
1/2 tsp
dried thyme, crumbled
1 tsp
dried basil, crumbled
1/2 tsp
freshly ground black pepper
1/2 tsp
4 Tbsp
parmesan, freshly grated


1Pound breasts between waxed paper to thickness of 1/4 inch.

2Wrap each chicken breast separately in plastic and freeze until firm but not solid.

3Cut chicken crosswise into 1/8 inch wide strips.

4Cover broccoli with cold water in medium bowl.

5Coat heavy skillet with vegetable spray.

6Add olive oil and heat over high heat 1 minute.

7Add red peppers (or green), onion, garlic, basil, thyme, repper and rosemary to pan.

8Stir fry 2 minutes.

9Drain broccoli, but do not shake off excess water and add to skillet.

10Stir fry 3 minutes then reduce heat to medium-low, cover and steam 2 minutes.

11Stir in chicken.

12Cover and steam until chicken is almost cooked through, about 1 minute.

13Uncover and increase heat and stir fry until liquid reduces slightly, about 1 minute.

14Divide among heated plates.

15Top each portion with 1 tablespoon parmesan.
