Stir Fried Rice American Alternative

I always loved my Chinese chicken or pork stir fry & when they send the extra white rice with your meal I started using that rice & make my own version of a healthier fried rice. Another great meal idea that I am blessed to have my grand children eating as a healthier alternative to eating foods high in salt & other unhealthy ingredients used in most stir fry cooking.

1 Tbsp
garlic minced
1 1/2 tsp
fresh ginger minced or grated fine
1 medium
onion chopped small or minced
1 1/2 c
black beans
1 1/2 c
1 lb
baby carrots
1 1/2 c
yellow squash
1 1/2 c
1 lb
chicken, turkey, pork or beef cubed
8 c
boiled rice
2 Tbsp
canola oil

Directions Step-By-Step

Over medium to medium high heat ( depending on stove temp. since most stoves variate in temperatures )Saute garlic, onion, ginger in 2 Tbsp canola oil until half sweated in a ex large or chicken fryer skillet.
Add corn, black beans, zucchini, yellow squash & baby carrots & cover with lid. Allow to steam with above ingredients.
In separate fry pan brown meat of choice until just done, clear running juices a must.
Once meat is finished, add to veggies listed above. Make sure all is combined well w/o mushing the veggies.
Once Meat & veggie combination is cooked threw add the 8 cups of cooked rice. Stir well & serve.
Alternative veggies can be used such as Broccoli, cauliflower, mushrooms & peppers.
