|1 lb||sweet italian sausage, no casings|
|2 large||onions, sliced|
|2 small||green peppers, chopped|
|3 ribs||celery, sliced|
|2 c||frozen peas, thawed|
|2 c||instant rice|
|1 pkg||dehydrated chicken noodle soup|
In a large nonstick skillet, brown sausage over medium high heat. Add onions, celery & peas to skillet. Over medium heat, cook, stirring occasionally, until vegetables are tender & sausage is cooked through, about 15 - 20 minutes.
Meanwhile, in medium pot, bring water, rice & dehydrated soup to boil; reduce heat to medium. Simmer until rice & noodles are tender, about 7 minutes, adding additional water if needed.
Combine rice mixture & sausage mixture & serve topped with scallions.
