If you have lots of Zucchini and yellow squash, here is a quick and easy way to use it. Everyone who has tried this recipe loves it.

1 medium
zucchini, cut into bite size pieces
2 small
yellow squash, cut into bite size pieces
1 medium
onion, diced
1 can(s)
chicken broth, i use low sodium
1 pkg
hidden valley ranch dressing mix

COOK ALL ABOVE INGREDIENTS UNTIL SQUASH IS TENDER. YOU MAY ALSO ADD MUSHROOMS TO THE ABOVE.

corn tortillas (12)
2 can(s)
cream of mushroom soup, fat-free
1/2 c
milk
1 can(s)
chicken, drained
1 tsp
cumin

ADD TORTILLAS, SOUP, MILK, CHICKEN AND CUMIN TO VEGGIE MIXTURE. TOP WITH GRATED CHEESE.

Directions Step-By-Step
