large chicken breasts
salsa (i used corn and blackbean)
garnish: cilantro and shredded cheese. i used mozarella and chpotle white cheddar
Add chicken, mushrooms, salsa, curry and cumin to crockpot. I used completely frozen chicken. No need to thaw.
Cook on low - medium for about 6-7 hours, until chicken is tender.
Boil noodles. Add noodles, wine and corn to crockpot (I used frozen corn).
Let stand in crockpot on a warming setting for about 30-40 minutes. Taste and add salt, if desired. I didn't add salt because the salsa is salty enough for my tastes.
Garnish with cilantro and shredded cheese. Yum!
