Spread spicy brown mustard generously all over chicken breasts. Sprinkle garlic powder and kosher salt to taste.
Wrap each chicken breast with one to two slices of bacon and secure with toothpicks.
Sear the chicken in a pain coated with olive oil at medium high heat on each side until bacon is browned and crisp. (About 4-5 minutes on each side, watch carefully)
Add a little bit of olive oil to bottom of an oven safe dish(or use nonstick spray) and place chicken in dish and bake at 375 degrees until juices run clear. About 20-25 minutes. Serve over rice or with vegetables of your choice.
