This is simply a great recipe that has been in our family a long time.Easy to fix and just wonderful flavors. A go to recipe if unexpected company is coming.

green bell pepper, chopped
1 c
onion, chopped
1 can(s)
8-oz. sliced mushrooms
1 1/2 c
chicken broth, low salt
2 c
chicken breasts, chopped
1 can(s)
16-oz. whole tomatoes, drained
2 Tbsp
vegetable oil
2 1/2 Tbsp
3 Tbsp
soy sauce, low sodium

Directions Step-By-Step

In a large deep skillet cook green peppers and onions in oil over low heat until tender.
Mix small amount of chicken broth with the cornstarch and add to vegetables in skillet. Add remaining broth and soy sauce. Stir in the chicken, and stir constantly until clear and thickened. Add tomatoes and mushrooms. Heat through. Serve over white rice.
