Soy Sauce Chicken

I learned this recipe when I was living in Okinawa and it is a family favorite!

Ingredients

21/2 lb
chicken, in like size pieces

SAUCE

2/3 c
soy sauce
4 slice
fresh ginger
2 Tbsp
wine
1/2-2/3 c
sugar
2 c
water
3-4 medium
star anise

GARNISH

3 sprig(s)
green onions sliced on the bias for garnish

Step-By-Step

1Combine all ingredients except chicken and bring to a boil.
2Add chicken, cover, and cook for 10 minutes.
3Remove cover, lower heat
Turn chicken and baste
Add more water if needed
4Cook another 30 minutes
Sauce should be thick, about 1 cup
5Cut large pieces of chicken in half and toss in sauce

Garnish with 3 green onions sliced on the bias
6Serve over rice
